An ultra-orthodox Jewish woman listens to a chicken's heart, before selecting it for use in the Jewish ritual of Kaparot, in which it is believed that one transfers one's sins from the past year into the chicken, by reciting a blessing and waving the animal above their head. The ritual is performed before the Day of Atonement, Yom Kippur, the holiest day in the Jewish year. The chicken is later slaughtered and given to charity. Mahane Yehuda Market, Jerusalem.
