**FILE**Ultra-Orthodox Jews fill water from a mountain spring in Jerusalem to be used to bake the matzot (unleavened bread) during the Maim Shelanu ceremony 06 April 2006. Religious Jews throughout the world eat matzhos during the eight-day Pesach holiday (Passover), which begins on tomorrow with the sunset 12 April to commemorate the Israelis' exodus from Egypt some 3,500 years ago. Due to the haste with which the Jews left Egypt, the bread they had prepared for the journey did not have time to rise. To commemorate their ancestors' plight, the religious avoid eating leavened food products throughout Passover.
